Soba: Buckwheat Noodles


	    





Soba noodles are a native Japanese Cuisine made from the flour of buckwheat and wheat flour. They are roughly comparable to spaghetti with a slightly softer texture. Soba is commonly prepared in hot and cold dishes along with a broth or soya based dipping sauce topped with spring onion and hot pepper flakes. Like pasta, soba noodles are available in dried form in supermarkets, but they are best eaten freshly made by hand.

The key to delicious Soba all comes down to the proper mixture of soba flour, wheat flour and water. The correct amount of water must be added step by step to the flower and mixed for several minutes until the perfect dough is created.
